Cheap Recipes #18: Coffee Brined Chicken?

So what have you got to cook in your kitchen? If you've never heard of cooking your chicken with coffee, you're missing out on a relatively little known dish that has a budget-friendly appeal. Just get into your spice cabinet and combine these ingredients to make something truly delicious but amazingly cheap. The drumsticks in this dish can usually be found relatively for a smaller price, but you can also use other chicken cuts or meats to achieve a similar taste. Here's the recipe for dinner tonight.

Ingredients

  • 1 ½ brewed coffee, extra strong
  • 1/4 cup salt
  • 3 tbsp. sugar
  • 2 tbsp. chili powder
  • 1/2 tsp. crushed red pepper
  • 3 gloves garlic, crushed
  • 1/2 tbsp. cinnamon or 1 cinnamon stick
  • 8 chicken drumsticks

The first thing you need to do is find a large bowl, then stir with 2 cups of water, the coffee , salt and sugar until salt and sugar completely evaporate into the mixture. Then, stir in the chili powder, red pepper, garlic and cinnamon. Add the chicken to the mixture. You can place a small plate on top to keep the chicken submerged. You need to refrigerate the chicken in the marinade for about 2 to 4 hours before cooking.

Now, preheat the broiler. Lift the chicken from the brine and place on the broiler pan. You can discard the brine unless you want to make more chicken. Broil the drumsticks 4 to 6 inches from heat source until browned, which takes about 10 minutes. Then, turn the chicken over and broil until the other side is golden brown, about 10 minutes. You can then set the oven to 350 degrees Fahrenheit and move the pan to the rack in the middle of the oven. Bake until drumsticks are no longer pink at the bone, which should be about 10 to 15 minutes. Now it's ready to be served!
